Luscious Lemon Cake
- 8 egg yolks
- 3/4 c. butter or oleo
- 1 1/4 c. sugar
- 2 1/2 c. sifted cake flour
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 3/4 c. milk
- 1 tsp. grated lemon rind
- 1 tsp. fresh lemon juice
- 1 tsp. vanilla
- Beat egg yolks at high speed with mixer for 4 minutes.
- Set aside.
- Beat butter at medium speed until creamy.
- Gradually add sugar; beat well.
- Add egg yolks.
- Beat well.
- Combine flour, baking powder and salt.
- Add to butter mixture alternately with milk, beginning and ending with flour mixture.
- Stir in lemon juice, rind and vanilla.
- Spoon into 3 greased and floured 8-inch cake pans.
- Bake at 375u0b0 for 18 to 20 minutes, or until tests done.
- Cool in pan on wire rack for 10 minutes; remove from pan and cool completely.
- Frost top, sides and between layers with Lemon Frosting.
