Minty Zucchini Salad

  1. In large bowl mix the dressing ingredients
  2. Trim the end off the zucchini
  3. Using a peeler or mandolin, shave the zucchini lengthwise to create ribbons.
  4. Make the ribbons about 1/6th inch thick.
  5. When you get to the center of the zucchini, flip it over and do the other side, until you reach the center.
  6. Add the zucchini ribbons to the bowl with the dressing.
  7. Add the mint, olives and greens.
  8. Toss gently to coast with the dressing.
  9. Top with the goat cheese and nuts.
  10. Serve right off.
