Pinto Beans
- 1 lb dried pinto bean
- water
- 2 garlic cloves, minced
- 2 yellow onions, minced
- 13 cup jalapeno, minced
- 1 tablespoon sugar
- 1 teaspoon cumin, ground
- 14 teaspoon black pepper
- 1 teaspoon salt
- 34 cup bacon, chopped
- Wash beans; put into a large bowl or cooking pot.
- Pour water over beans to cover them; let stand overnight, drain and discard water.
- Put beans, garlic, onions, peppers, sugar, cumin and peppers in to a large stock pot.
- Pour water to cover mixture.
- Bring to a boil and simmer for 45 minutes.
- Add salt and bacon; continue to simmer until beans are tender, about 45 minutes.
