Bananas Foster Pudding
- cups maple-flavored or pancake syrup
- qt. bananas, sliced
- qt. cold milk
- pkg. JELL-O Vanilla Instant Pudding
- cups whipped topping
- tsp. rum extract
- Bring syrup to boil in large saucepan; gently stir in bananas.
- Remove from heat.
- Cool.
- Meanwhile, pour milk into 20-quart bowl of electric mixer fitted with wire whisk attachment.
- Add pudding mix.
- Beat on low speed 30 seconds, scraping side of bowl as needed.
- Beat on medium speed 1 to 2 minutes or until smooth and creamy.
- DO NOT OVERMIX.
- Fold in whipped topping.
- Add extract to banana mixture; mix well.
- Spoon 1/4 cup of the pudding mixture into each of 56 individual dessert dishes (or 14 dessert dishes for trial recipe); top with 2 Tbsp.
- of the banana mixture and second layer of the pudding mixture.
- Refrigerate 1 to 2 hours or until chilled.
