Bananas Foster Pudding

  1. Bring syrup to boil in large saucepan; gently stir in bananas.
  2. Remove from heat.
  3. Cool.
  4. Meanwhile, pour milk into 20-quart bowl of electric mixer fitted with wire whisk attachment.
  5. Add pudding mix.
  6. Beat on low speed 30 seconds, scraping side of bowl as needed.
  7. Beat on medium speed 1 to 2 minutes or until smooth and creamy.
  8. DO NOT OVERMIX.
  9. Fold in whipped topping.
  10. Add extract to banana mixture; mix well.
  11. Spoon 1/4 cup of the pudding mixture into each of 56 individual dessert dishes (or 14 dessert dishes for trial recipe); top with 2 Tbsp.
  12. of the banana mixture and second layer of the pudding mixture.
  13. Refrigerate 1 to 2 hours or until chilled.
