Quick Tomato and Beef Macaroni and Cheese
- 1 lb ground beef
- 1 cup onion, chopped
- salt and pepper
- 1 (15 ounce) can tomatoes, diced and undrained
- 1 cup water
- 1 cup elbow macaroni, uncooked
- 1 cup cheddar cheese, grated
- Brown ground beef and onion, drain.
- Add salt, pepper, tomatoes, and water
- and bring to boil.
- Stir in macaroni and cover and simmer for 10 minutes or until macaroni is tender.
- Stir in cheese and garnish with sour cream if desired.
