Rice And Fruit
- 1/4 c. butter or margarine
- 1 medium onion, chopped
- 1 green pepper, chopped
- 1 c. chopped celery
- 1/4 lb. mushrooms, chopped
- 2 chicken bouillon cubes
- 1 c. uncooked brown rice
- 1 tsp. ground marjoram
- 1 (17 oz.) can fruit cocktail or chopped peaches, drained
- 1/2 tsp. salt
- dash of pepper
- 2 c. water
- Heat oven to 350u0b0.
- In medium saucepan, melt butter.
- Stir in onion, green pepper, celery and mushrooms; cover.
- Cook 5 minutes or until tender.
- Stir in water and chicken bouillon cubes; heat until boiling.
- Remove from heat; stir in rice, marjoram, salt and pepper.
- Pour into greased 2-quart casserole; cover.
- Bake 30 minutes or until rice is tender and liquid absorbed.
- Stir in fruit cocktail or peaches.
- Bake 15 minutes longer or until fruit is hot.
- Makes 8 servings.
