Potato Casserole

  1. Peel potatoes, cut into thin slices.
  2. Pat dry with tea towel, add salt and pepper, toss lightly.
  3. Put milk and potato slices into a saucepan, bring to boil.
  4. Reduce heat and simmer gently covered for 10 minutes.
  5. Add cream and crushed garlic.
  6. Simmer covered for further 20 minutes.
  7. Add shallots.
  8. Spoon potatoes and liquid into a casserole.
  9. Dot with butter.
  10. Bake uncovered in a moderate oven for 10 minutes or until golden brown.
