Indian Egg Masala

  1. Heat oil in a pan.
  2. Add cumin seeds, when they begin to crackle add sliced onions, fry for a min or 2 and then add all the spices except salt and garam masala.
  3. Fry for another minute.
  4. Now add the chopped tomatoes.
  5. keep stirring till oil separates and then gradually add one cup water to make a little gravy.
  6. Cut the hard Boiled eggs into half lengthwise and put in the gravy.
  7. Add salt and garam masala and simmer for 2-3 minutes
  8. Garnish with finely chopped cilantro.
  9. Serve hot.
