Apple Walnut Muffins Recipe
- 2 c. Flour
- 2 tsp Baking pwdr
- 1 1/2 tsp Cinnamon, grnd
- 1/4 tsp Nutmeg, grnd
- 1/4 tsp Salt
- 2 x Large eggs
- 2/3 c. Apple juice concentrate
- 1/3 c. Butter
- 1 tsp Vanilla
- 2 med Apples
- 1/2 c. Walnuts, minced
- Preheat oven to 350.
- Peel, seed, and finely chop apples.
- Grease 12 muffin c. or possibly line with paper liners; set aside.
- Combine dry ingredients in medium bowl.
- Combine and add in Large eggs, apple juice concentrate, melted butter, and vanilla; mix just till dry ingredients are moistened.
- Stir in apple and walnuts.
- Spoon batter into prepared c., filling each c. 3/4 full.
- Bake 25 min, till golden.
- Let stand in pan on wire rack 5 min.
- Remove from pan.
- Serve hot or possibly at room temperature.
- Cooled muffins may be wrapped securely and frzn up to 3 months.
