Tarkari Do Pyaja
- 1-1/2 lb. green peas
- 7 oz. cauliflower
- 7 oz. tomatoes
- 2 onions, chopped
- 1/2 cup fresh curd
- 5 green chilies
- 2 tsp. coriander seeds
- 1/2 tsp. turmeric powder
- 1/2 tsp. cumin seeds
- 1 piece ginger, chopped
- 3 cloves garlic, chopped
- 1/2 tsp. garam masala
- 2 dashes sugar
- Salt, to taste
- 2 tbsp. ghee
- 1 handful chopped coriander leaves
- Cut vegetabes into small pieces.
- Take onion, green chilies, coriander, cumin seeds, turmeric powder, ginger, and garlic and grind into a fine paste.
- Heat ghee and fry the paste until light brown.
- Add a pinch of sugar and required salt.
- Add vegetables, fry, and add well beaten curd and half a cup of water.
- Cook until tender and mix in garam masala.
- Garnish with chipped coriander leaves and serve hot.
