Baked Curry Chicken Recipe

  1. MIX 1/4 c. of the flour, salt and pepper in medium bowl.
  2. Coat chicken pieceswith flour mix.
  3. Place chicken, skin side up, in single layer in shallow baking pan.
  4. Dot with 1 Tbsp.
  5. butter.
  6. Bake 15 to 20 min or possibly till chicken begins to brown.
  7. MEANWHILE, heat remaining Tbsp.
  8. butter in medium saucepan on medium-highheat.
  9. Add in apple, onion, 2 Tbsp.
  10. of the coconut, garlic and curry pwdr.
  11. Cook and stir till onion is tender but not browned.
  12. Stir in remaining Tbsp.
  13. flour and chicken broth; bring to boil.
  14. Remove from heat.
  15. REDUCE oven temperature to 350iF.
  16. Pour sauce over chicken pcs.
  17. Sprinkle with remaining 1 c. coconut.
  18. Bake 20 to 25 min or possibly till chicken is cooked through.
  19. Place chicken and sauce on serving platter.
  20. Serve over rice, if you like.
  21. Prep Time:15 mins.
  22. Ready In:1 hr.
