Baked Curry Chicken Recipe
- 1/4 c. plus 1 Tbsp. flour divided
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 1/2 lb chicken pcs
- 2 Tbsp. butter or possibly margarine divided
- 1 c. coarsely minced apple
- 1/2 c. minced onion
- 1 c. plus 2 Tbsp. BAKER'S ANGEL FLAKE Coconut divided
- 1 clv garlic chopped
- 2 tsp curry pwdr
- 1 1/2 c. chicken broth HEAT oven to 450iF.
- MIX 1/4 c. of the flour, salt and pepper in medium bowl.
- Coat chicken pieceswith flour mix.
- Place chicken, skin side up, in single layer in shallow baking pan.
- Dot with 1 Tbsp.
- butter.
- Bake 15 to 20 min or possibly till chicken begins to brown.
- MEANWHILE, heat remaining Tbsp.
- butter in medium saucepan on medium-highheat.
- Add in apple, onion, 2 Tbsp.
- of the coconut, garlic and curry pwdr.
- Cook and stir till onion is tender but not browned.
- Stir in remaining Tbsp.
- flour and chicken broth; bring to boil.
- Remove from heat.
- REDUCE oven temperature to 350iF.
- Pour sauce over chicken pcs.
- Sprinkle with remaining 1 c. coconut.
- Bake 20 to 25 min or possibly till chicken is cooked through.
- Place chicken and sauce on serving platter.
- Serve over rice, if you like.
