Sweet and Salty Chicken Wing and Burdock Root
- 5 to 6 Chicken wings - the midsection and tip
- 1 Salt
- 1 Sake
- 1 Burdock root
- 200 ml Chicken stock
- 1 tbsp Soy sauce
- 2 tbsp Mirin
- 1 tbsp Honey
- 1 tbsp Vegetable oil
- Scrape the dirt off the burdock root with the back of a knife, cut up roughly and soak in water for about 5 minutes.
- Drain.
- Season the chicken wings with salt and pepper.
- Heat some oil in a frying pan and fry the wings skin side first over medium heat.
- When browned turn over and cook the other side.
- Add the burdock root and stir fry quickly.
- Add the ingredients marked (chicken stock, soy sauce, mirin, honey) and mix well.
- Put a lid on and simmer over medium heat for 15 minutes.
- When the liquid has reduced by half, turn off the heat.
- Leave with the lid on until cooled to let the flavors really soak in.
- Done!
