Roasted Asparagus with Tasso

  1. Preheat the oven to 450 degrees F.
  2. In a large skillet, heat the oil over medium-high heat.
  3. Add the tasso and cook, stirring constantly, until browned, 2 to 3 minutes.
  4. Add the shallots and cook until just softened, about 1 minute.
  5. Add the asparagus and toss to coat.
  6. Remove from the heat and season with salt and pepper, to taste.
  7. Transfer to a roasting pan or baking dish.
  8. Roast asparagus until crisp tender, turning occasionally, 15 to 20 minutes.
  9. Remove from the oven and top with Parmesan shavings.
  10. Serve warm.
