Ambrosia Fruit Compote

  1. Section oranges, and cut plums in 1/2.
  2. Drain pineapple, reserving 1/4 cup syrup.
  3. Combine fruit and oranges.
  4. Heat syrup, brown sugar and orange zest till sugar dissolves.
  5. Stir in rum.
  6. Pour over friut.
  7. Stir; and chill.
  8. Garnish with coconut.
