Spinach & Tortellini Soup
- 1 lb fresh tortellini (your Choice)
- 10 ounces fresh spinach
- 6 cups chicken stock
- 6 garlic cloves
- 1 tablespoon olive oil
- 0.5 (19 ounce) can white beans, rinsed and drained (navy, canellini or kidney)
- salt
- pepper
- fresh nutmeg, grated
- 14 cup parmesan cheese
- In large saucepan heat olive oil and saute garlic.
- Add chicken stock and bring to a boil.
- Add pasta and cook until desired tenderness.
- Add beans and heat.
- Add spinach
- The heat should cook the spinach.
- Add seasonings.
- Ladle into bowls and sprinkle with Parmesan cheese.
