Spaghetti Pie
- 6 oz. spaghetti or angel hair
- 2 Tbsp. margarine
- 1/3 c. grated Parmesan cheese
- 2 eggs, well beaten
- 8 oz. cottage cheese
- 1 lb. ground chuck
- 1/2 c. chopped onions
- 1/4 c. chopped green peppers
- 1 can Ro-Tel tomatoes
- 1 (6 oz.) can tomato paste
- 1 tsp. sugar
- 1 tsp. oregano
- 1/2 tsp. garlic salt
- 1 c. shredded Mozzarella cheese
- Cook the spaghetti according to package.
- Drain and stir in margarine into hot spaghetti.
- Stir in Parmesan cheese and eggs. Form spaghetti mixture into a "crust" in a buttered 10-inch pie plate.
- Spread cottage cheese over bottom of crust.
- In skillet, cook ground chuck, onions and green peppers until vegetables are tender and meat is browned.
- Drain excess fat.
- Stir in undrained tomatoes (chopped), tomato paste, oregano and garlic salt.
- Heat through.
- Turn meat mixture into spaghetti crust.
- Bake uncovered at 350u0b0 for 20 minutes.
- Sprinkle Mozzarella cheese on top and bake 5 minutes more.
