Cacciocavallo and Shiitake Quesadillas

  1. In a nonstick frying pan, heat the oil over medium heat.
  2. Add mushrooms and stir for for about 5 minutes.
  3. Add thyme, salt and pepper.
  4. Remove from heat.
  5. Spread sliced cheese on four tortillas and top evenly with mushroom mixture.
  6. Cover each with another tortilla and press together so they stick.
  7. Fry each quesadilla in a skillet on medium for about 2 minutes on each side, so the cheese can melt.
  8. Cut each quesadilla into 6 wedges and serve immediately.
