Romaine Salad with Avocado Fans

  1. In a small bowl, whisk together oil, shallot, lemon juice, salt and pepper.
  2. Reserve
  3. Cut avocado into thin slices, maintaining the shape of the avocado half.
  4. Using your fingers, gently fan out slices.
  5. Just before serving, toss lettuce with dressing and top with avocado fans.
