Heart Enthusiasts Lowfat Cheesecake Squares Recipe
- 1 c. graham cracker crumbs
- 1 c. sugar, divided
- 3 tbsp. low cholesterol butter
- 1 (16 ounce.) container lowfat cottage cheese
- 1 (8 ounce.) lowfat cream cheese
- 3 Large eggs (egg beaters)
- 1 1/4 c. lowfat lowfat sour cream
- Preheat oven to 350 degrees.
- Mix together crumbs, 2 Tbsp.
- sugar and butter.
- Press into 9 inch square baking pan.
- Bake 10 min.
- Reduce oven to 300 degrees.
- Place cottage cheese into blender, blend till smooth.
- Combine cottage cheese, cream cheese, 3/4 c. sugar; fold in blender at medium speed.
- Add in Large eggs, one egg at a time, mixing after each addition.
- Pour over crust.
- Bake 45 min.
- Mix lowfat sour cream, remaining sugar and vanilla.
- Spread proportionately over cheesecake; continue baking 10 min.
- Cold completely.
- Chill.
- Cut into squares.
- Garnish with fruit.
- 12 servings.
