Snowball Cake
- 2 envelopes Knox gelatine
- 4 Tbsp. cold water
- 1 c. crushed pineapple
- 1 c. sugar
- 1 c. pineapple juice
- 1 tsp. salt
- juice of 1 lemon
- 2 large pkg. Dream Whip
- 1 can flaked coconut
- 1 c. boiling water
- 1 large angel food cake
- Dissolve gelatine in cold water.
- Add cup of boiling water. Let cool.
- Add pineapple, sugar, juices and salt.
- Set in refrigerator until cold.
- Fold in one half of Dream Whip which has been whipped.
- Take brown crust off cake.
- Break cake into bite size pieces.
- Line long pan or dish with cake pieces.
- Pour half of the pineapple mixture over cake.
- Make another layer of cake. Pour rest of pineapple mixture over cake.
- Take other half of Dream Whip and pour over top of pineapple mixture.
- Sprinkle with coconut.
- Refrigerate until cool.
- Can be made ahead of time and frozen.
- Yield:
- 24 pieces.
