Looks Bad, Tastes Good -- Potatoes and Lettuce
- 5 lb. potatoes, peeled, washed and sliced, 1/4-inch thick
- 1/2 stick butter, softened
- 1/4 to 1/2 pint sour cream
- Salt and pepper, to taste
- Milk, as needed
- 1 head iceberg lettuce, halved
- Heinz Tomato Ketchup
- Put potatoes in a pot and cover with water.
- Bring to a boil; simmer until potatoes are soft.
- Drain water off.
- With a electric mixer start beating potatoes.
- Add butter, sour cream and some milk.
- Season with a little salt and pepper.
- Keep beating adding milk as need until smooth and elastic.
- When a smooth consistency is attained, (I try for a smooth texture that will peak like whippped cream, but thicker).
- Add more salt and pepper to taste.
- Take the head of iceberg lettuce and cut in 1/2.
- Cut core out and slice into 1/4-inch slices.
- Put a large handful in a soup bowl and top with 2 or 3 heaping tablespoons of mashed potatoes.
- Mix together and top with Heinz tomato ketchup.
