Looks Bad, Tastes Good -- Potatoes and Lettuce

  1. Put potatoes in a pot and cover with water.
  2. Bring to a boil; simmer until potatoes are soft.
  3. Drain water off.
  4. With a electric mixer start beating potatoes.
  5. Add butter, sour cream and some milk.
  6. Season with a little salt and pepper.
  7. Keep beating adding milk as need until smooth and elastic.
  8. When a smooth consistency is attained, (I try for a smooth texture that will peak like whippped cream, but thicker).
  9. Add more salt and pepper to taste.
  10. Take the head of iceberg lettuce and cut in 1/2.
  11. Cut core out and slice into 1/4-inch slices.
  12. Put a large handful in a soup bowl and top with 2 or 3 heaping tablespoons of mashed potatoes.
  13. Mix together and top with Heinz tomato ketchup.
