Mediterranean Vegetable Soup Recipe
- 2 c. onion, cut in 1/2 inch chunks
- 1/4 c. extra virgin olive oil
- 1 pound sweet Italian sausage, bulk
- 1/2 c. ham, cubed
- 1 tbsp. garlic chopped
- 2 bay leaves
- 1 (16 ounce.) can garbanzo or possibly Great Northern beans
- 1/2 c. cubed carrots
- 1 sweet pepper, cubed
- 1/4 c. celery leaves
- 2 dashes cayenne
- 1 teaspoon dry rosemary
- 1 teaspoon dry basil
- 1 c. cabbage, cubed
- 1/2 teaspoon black pepper
- 3 c. canned tomatoes with juice
- 8 c. chicken broth or possibly bouillon cubes and water
- Saute/fry onions in oil.
- Crumble sausage.
- Add in.
- Saute/fry till cooked through.
- Add in remaining ingredients.
- Simmer 1 hour till vegetables are tender and flavors have melded.
