Fresh Fruitcake
- 2 oranges
- 2 apples
- 2 bananas, ripe
- 2 eggs
- 1 12 cups sugar
- 12 cup butter, softened
- 3 cups flour
- 1 tablespoon baking powder
- 2 teaspoons baking soda
- 34 cup golden raisin
- 34 cup walnuts, chopped
- Preheat oven to 350*.
- Cut oranges, with the rind, into 8 sections & remove the seeds.
- Chop fine in a food processor.
- Set aside in a bowl.
- Repeat with apples (peel, if desired) and add to the oranges.
- Peel bananas, puree and add to rest of fruit, mixing well.
- In a large bowl, beat the eggs.
- Slowly add the sugar, beating until thick and smooth.
- Beat in the butter.
- Add the fruits.
- Combine dry ingredients (flour, powder & soda) and add to fruit mixture.
- Stir in the raisins and walnuts.
- Pour into (2) greased and floured 9" x 5" loaf pans.
- Bake @ 350* for 55-60 minutes, until toothpick inserted comes out clean.
- Cool on rack before slicing.
