Fresh Fruitcake

  1. Preheat oven to 350*.
  2. Cut oranges, with the rind, into 8 sections & remove the seeds.
  3. Chop fine in a food processor.
  4. Set aside in a bowl.
  5. Repeat with apples (peel, if desired) and add to the oranges.
  6. Peel bananas, puree and add to rest of fruit, mixing well.
  7. In a large bowl, beat the eggs.
  8. Slowly add the sugar, beating until thick and smooth.
  9. Beat in the butter.
  10. Add the fruits.
  11. Combine dry ingredients (flour, powder & soda) and add to fruit mixture.
  12. Stir in the raisins and walnuts.
  13. Pour into (2) greased and floured 9" x 5" loaf pans.
  14. Bake @ 350* for 55-60 minutes, until toothpick inserted comes out clean.
  15. Cool on rack before slicing.
