Apple Upside Down Cake

  1. Preheat oven to 350 degrees.
  2. Grease and flour a 10 inch bundt pan.
  3. Melt 1/2 cup butter in a saucepan on medium heat.
  4. Add brown sugar and whipping cream; stirring constantly for 2-3 minutes until sugar is dissolved.
  5. Be careful not to boil.
  6. Add pecans (if desired) and apples and cook until apples soften, about 2-3 minutes.
  7. Pour in bundt pan.
  8. Cream 1/2 cup butter and sugar at medium speed with a mixer.
  9. Add eggs one at a time, mixing after each.
  10. Add vanilla; beat well.
  11. Combine flour and the next 4 ingredients; stir well.
  12. Add flour mixture to creamed mixture alternately with milk; start and end with flour mixture; mix well after each addition.
  13. Spoon batter evenly over apples.
  14. Bake for 30-35 minutes or until a wooden pick inserted in center comes out clean.
  15. Let cool in pan 5-10 minutes; invert cake onto a serving plate.
