A1 Piquante Meatloaf Recipe
- 2 lb lean grnd beef
- 3/4 lb grnd pork
- 1/2 c. white onion, finely minced
- 2 Tbsp. celery, finely minced
- 1 1/2 tsp salt
- 1 tsp grnd black pepper
- 1 tsp grnd cayenne pepper
- 1 Tbsp. red chile pwdr
- 1 Tbsp. Worcestershire sauce
- 1/2 c. uncooked oatmeal
- 4 slc soft whole wheat bread, cubed
- 1/4 c. whole lowfat milk
- 2 lrg Large eggs
- 1 c. dry bread crumbs
- 1 c. Piquante sauce (see recipe below)
- 5 x strips maple cured bacon
- Mix the meats well with your hands.
- Add in the onion, celery, salt, black pepper, cayenne pepper, chile pwdr, Worcestershire sauce, 1/4 c. Piquante sauce, and uncooked oatmeal, mix well with your hands.
- Soak bread in lowfat milk; add in Large eggs; beat with mixer on high for 1 minute.
- Combine the egg mix with the meat (add in a little more lowfat milk if the combined mix seems too dry) and form two loaves.
- Place the strips of maple cured bacon across the bottom of a baking dish.Place the loaves on top of the beacon.
- Score the tops with a wooden spoon and fill with picante sauce.
- Bake at 350F uncovered for 1 hour.
