Crispy Sweet Potato Fries
- 3 lg.sweet potatoes
- 2 tbsp corn starch
- 1 kosher salt & pepper
- 1 cumin, cyanne pepper
- 2 tbsp EVOO
- pre heat oven to 425 degrees
- peel and cut sweet potatoes into strips.
- Lightly dust with corn starch by shaking them in a bag.
- Place on a ccokie sheet.
- Drizzle with EVOO, sprinkle with spices.
- about a teaspoon of salt, 1/2 teaspoon pepper.
- eyeball the other.
- I prefer the cumin and cyanne, but you choose whichever you like.
- separate on cookie sheet.
- No touching....otherwise they'll steam.
- bake 15min.
- , turn them and go for another 10min or so.
