Light Healthy Grilled Lamb and Pumpkin Stack
- 13 cup couscous
- 150 g pumpkin, sliced
- 1 zucchini, long slices
- 120 g lamb steaks
- 12 teaspoon ground cumin
- 12 onion
- 20 g reduced-fat feta cheese
- 12 lettuce leaf
- 14 carrot
- 14 cucumber
- 13 tomatoes
- Cook pumpkin and zucchini.
- Sprinkle cumin over lamb and cook onion and lamb in pan, using water to stop it sticking as required.
- (Or non-stick spray if preferred.
- ).
- Measure couscous into bowl and pour over it the same quantity of boiling water.
- Place tea-towel over bowl and leave to soften.
- Prepare salad.
- Serve in layers as follows: Couscous at bottom, then pumpkin, zucchini, onion then lamb.
- Crumble feta over lamb.
- Serve salad on side.
