Light Healthy Grilled Lamb and Pumpkin Stack

  1. Cook pumpkin and zucchini.
  2. Sprinkle cumin over lamb and cook onion and lamb in pan, using water to stop it sticking as required.
  3. (Or non-stick spray if preferred.
  4. ).
  5. Measure couscous into bowl and pour over it the same quantity of boiling water.
  6. Place tea-towel over bowl and leave to soften.
  7. Prepare salad.
  8. Serve in layers as follows: Couscous at bottom, then pumpkin, zucchini, onion then lamb.
  9. Crumble feta over lamb.
  10. Serve salad on side.
