Zucchini Carrot Bread - My Way
- 34 cup carrot, grated
- 1 cup zucchini, grated
- 1 12 cups flour
- 2 medium eggs
- 12 cup applesauce
- 1 lemon, zest of
- 1 orange, zest of
- 14 teaspoon ground ginger
- 14 cup sugar
- 14 cup stevia
- 14 cup brown sugar
- 12 tablespoon cinnamon
- 14 teaspoon nutmeg
- 12 teaspoon baking powder
- 12 teaspoon baking soda
- 12 teaspoon salt
- Pre heat oven to 350.
- In large bowl, mixed dry ingredients together.
- In separate bowl, whisk eggs and apple sauce.
- Add wet ingredients to dry ingredients, mix until dry ingredients are well incorporated (will appear very dry, like a dough.
- ).
- Add zucchini, carrots, citrus zest; mix well.
- Pour into greased baking pan.
- Bake at 350 until center is done, about 90 minutes.
