Stuffed Breakfast Poblanos
- 2 Poblano Peppers
- 1 cup Cubed Potatoes
- 4 large Eggs
- 4 Breakfast Sausage Links
- 1 as needed Chopped Cilantro
- 1 Tomato
- 2 Green Onions
- 1 Red Onion
- 1/3 Jalapeno
- 1 as needed Cotija Cheese (crumbled)
- 1 as needed Salsa (homemade is best!!)
- 1 as needed Salt & Pepper
- 1 tbsp Cumin
- 1 tbsp Extra Virgin Olive Oil
- Coat poblanos lightly in olive oil and place on baking sheet under broiler, turning as they char.
- Once charred & bubbly place in paper bag (school lunch style) and close.
- Let rest for at least 15 min.
- You can also place peppers in bowl covered with Saran Wrap.
- Once done steaming, very carefully remove the outer skin on the pepper.
- Set aside to fill later.
