Hoppin John - Cajun Black-eyed Peas

  1. Bring peas to boil in saucepan.
  2. Fry bacon until crisp, drain, and remove from skillet.
  3. In drippings, saute onion, pepper and celery until tender.
  4. Add bacon and onions to peas; heat through.
  5. Add vegetables and cook an additional 10 minutes, covered.
  6. Add rice and remaining ingredients, cook for 25 minutes.
  7. Serve and enjoy a taste of Cajun cooking.
