Golden Cheesecake Squares
- Cake
- 1 cup wholemeal self raising flour
- 1 cup plain self raising flour
- 2 teaspoons grated lemon rind Safeway 4 ct For $5.00 thru 02/09
- 1/3 cup butter, melted
- 1/2 cup raw sugar
- 2 x 55g eggs, lightly beaten
- 3/4 cup milk
- Topping
- 250g block PHILADELPHIA Cream Cheese, softened
- 1/2 cup raw sugar
- 1 teaspoon vanilla essence
- 2 x 55g eggs, separated, whites beaten stiffly
- 3/4 cup raisins (reserve 1/4 cup)
- 2 teaspoons grated lemon rind Safeway 4 ct For $5.00 thru 02/09
- 1/2 cup silvered almonds
- Stir together flours, lemon rind, melted butter, sugar, eggs and milk, press into a greased Swiss Roll tin.
- Beat Philly* until smooth, add sugar, vanilla essence and egg yolks.
- Fold in 1/2 cup raisins and lemon rind.
- Spread over cake mixture.
- Sprinkle topping with remaining raisins and almonds.
- Bake in oven 180C for 30 minutes or until topping is golden brown.
