Almond Tartlets Recipe
- 14 ounce Shortcrust pastry
- 4 x Large eggs
- 3 1/2 ounce Caster sugar
- 4 ounce Grnd Almonds Decoration
- 5 ounce Icing Sugar
- 1 Tbsp. Lowfat milk
- 1 Tbsp. Lemon juice
- 12 x Glace Cherries
- Pre heat oven to 400*F Roll out dough and use to line 12 tatlet tins.Bake blind for 10 minutes.
- then remove from oven.
- Seperate Large eggs.
- Add in sugar to yolks and wisk together until pale and thick.
- Mix in grnd almonds.
- In another bowl, wisk egg whites until stif, then fold into almond mix.
- Fill pastry cases with almond mix.
- Place on a baking tray and bake for 15 to 20 minutes.
- until center is hard and springy.
- Leave to cold.
- Sift icing sugar into abowl and beat in lowfat milk and lemon juice until smooth.
- Spread over tartlets.
- Decorate with whole glazed cherries leave until set.
