Whole Wheat Pasta with Cilantro, Sun-Dried Tomatoes and Feta
- 4 ounces angel hair pasta or as needed, or spaghetti, preferably whole wheat
- 8 ounces sundried tomatoes in oil, coarsely chopped
- 2 tablespoons olive oil from tomatoes
- 8 ounces feta cheese crumbled
- 4 tablespoons pimento stuffed green olives sliced, optional
- 1 bunch cilantro fresh, coarsely chopped
- Cook the pasta according to the directions to desired consistency.
- Drain well.
- Meanwhile In a mixing bowl, mix together sun-dried tomatoes, olive oil, feta cheese, and olives if using until well combined.
- Add the cooked pasta into the mixing bowl along with cilantro.
- Toss everything together until well combined.
- Serve warm, at room temperature or chilled.
