Baigan Bhartha Recipe
- 2 med Large seedless brinjals
- 1 lrg Onion finely minced
- 1 lrg Tomato grated
- 1/2 tsp Ginger & garlic grnd
- 1/2 x Lemon
- 1 Tbsp. Coriander minced
- 1 tsp Red chilli pwdr
- 1/2 tsp Dhania, (coriander seed) pwdr
- 1/2 tsp Grated coconut
- 1/2 tsp Garam masala Salt to taste
- 3 Tbsp. Oil
- Choose healthy hard brinjals.
- Hold over a direct flame with stalk.
- Turn and proportionately burn until skin is charred.
- Repeat for other brinjal.
- Cold a bit.
- Hold under running water and gently scrape skin.
- Remove stalks, put brinjal in a large bowl.
- Mash well.
- Heat oil in a heavy saucepan.
- Add in ginger garlic, stir.
- Add in onions, stir fry until pink.
- Add in tomatoes, all dry masalas, simmer until oil separates.
- Add in lemon juice, coconut, brinjals, coriander and salt.
- Stir, simmer until oil separates again.
- Garnish with coriander, serve warm with parathas, etc.

- Makes: 4 servings
- Shelflife: fresh or possibly freeze for further use.
