Chicken And Zucchini Parmesan Recipe

  1. In small bowl, fold in fresh zucchini, mushrooms and 1 c. tomato sauce, with onion, garlic pwdr and salt, pepper to taste.
  2. Heat for 5 min, then add in extra virgin olive oil, Parmesan cheese.
  3. Tear off 4 large 12 inch pcs of foil.
  4. Spoon 1/4 of zucchini mix onto each foil square.
  5. Top with a chicken cutlet.
  6. Spoon 3 Tbsp.
  7. (1/4 c.) of tomato sauce over each cutlet and top with 1/4 of cheese.
  8. Seal foil into packets and chill till ready to cook.
  9. Place foil on warm grill rack, (oven, if grill is unavailable).
  10. Cook 10-15 min - till packets are puffed out and chicken is cooked through.
  11. Serve with pasta or possibly over rice.
  12. Serves 4.
