Chicken And Zucchini Parmesan Recipe
- 1 c. liquid removed canned zucchini in tomato sauce (1 c. sauce)
- 1 c. liquid removed canned sliced mushrooms
- 1 tbsp. + 1 teaspoon extra virgin olive oil
- 1/2 ounce. grated Parmesan cheese
- 4 (4 ounce.) chicken cutlets
- 3/4 c. tomato sauce
- 3 1/2-4 ounce. shredded Mozzarella cheese (1/2 c.)
- Garlic, onion pwdr, salt and pepper to taste
- In small bowl, fold in fresh zucchini, mushrooms and 1 c. tomato sauce, with onion, garlic pwdr and salt, pepper to taste.
- Heat for 5 min, then add in extra virgin olive oil, Parmesan cheese.
- Tear off 4 large 12 inch pcs of foil.
- Spoon 1/4 of zucchini mix onto each foil square.
- Top with a chicken cutlet.
- Spoon 3 Tbsp.
- (1/4 c.) of tomato sauce over each cutlet and top with 1/4 of cheese.
- Seal foil into packets and chill till ready to cook.
- Place foil on warm grill rack, (oven, if grill is unavailable).
- Cook 10-15 min - till packets are puffed out and chicken is cooked through.
- Serve with pasta or possibly over rice.
- Serves 4.
