Orange & Asparagus Salad

  1. Blanch asparagus by boiling in a saucepan of water for 3-4 minutes or until bright green in colour.
  2. Drain and rinse under cold running water.
  3. Cut the rind and pith from oranges and slice thinly.
  4. Place mesclun mix on a platter or in a bowl.
  5. Top with blanched asparagus, orange slices and mandarin segments.
  6. Pour over the dressing and serve.
