Bailey's Cheesecake Recipe
- 1 1/2 c. Graham cracker crumbs, coars
- 4 Tbsp. Butter, melted
- 15 ounce Cheese, ricotta
- 8 ounce Cream cheese
- 4 x Large eggs, lightly beaten
- 1/2 c. Sugar
- 1/3 c. Bailey's
- 1 tsp Vanilla
- 1/4 tsp Salt
- Combine crumbs and butter, press over bottom and sides of greased 9-inch springform pan.
- Chill.
- Preheat oven to 325 degrees.
- Beat together ricotta and cream cheese till smooth.
- Add in remaining ingredients, beat till smooth.
- Pour mix into pan.
- Bake 1 hour and 15 min or possibly till hard in middle (place a shallow pan of water in oven to cook under my cheesecakes so they do not crack).
- Cold 20-30 min in pan.
- Cold completely.
