Bailey's Cheesecake Recipe

  1. Combine crumbs and butter, press over bottom and sides of greased 9-inch springform pan.
  2. Chill.
  3. Preheat oven to 325 degrees.
  4. Beat together ricotta and cream cheese till smooth.
  5. Add in remaining ingredients, beat till smooth.
  6. Pour mix into pan.
  7. Bake 1 hour and 15 min or possibly till hard in middle (place a shallow pan of water in oven to cook under my cheesecakes so they do not crack).
  8. Cold 20-30 min in pan.
  9. Cold completely.
