Saucy Beef Carnitas
- 5 cloves Garlic, Chopped
- 2 Tablespoons Fresh Chopped Cilantro
- 1 can 8oz Fire Roasted Diced Tomatoes
- 1 Medium Onion, Diced
- 1 Roasted Bell Pepper, Chopped
- 1 Tablespoon Jalapeno Hot Sauce. Use More If You Want A Nice Kick
- 1 cup Red Wine
- 1 cup Beef Stock
- 1/2 cups Brewed Coffee
- 1 teaspoon Sugar
- 1 package Chipotle Taco Seasoning, 1 Ounce Packet
- 1 pound Chuck Steak Or London Broil
- 1 Tablespoon Cornstarch
- In a medium-sized bowl, combine all of the ingredients that are listed above the steak on the above list.
- Mix well.
- Then add the meat and flip it over a few times to coat the meat.
- Add the meat and the sauce into your slow cooker.
- Cook in slow cooker on low for 6 hours.
- At this point, remove meat from your slow cooker and shred it using two forks.
- Whisk the corn starch into the sauce and mix to combine.
- Then return the meat to slow cooker and continue cooking for another 30 minutes.
- Spoon meat and sauce into corn tortillas or eat it over Spanish rice.
