Blueberry Cookie Bars

  1. pre heat oven to 350
  2. grease a large 11x15 pan or deep cookie sheet
  3. Prepare Blueberry Sauce:
  4. combine sugar & corn starch in small sauce pan.
  5. Take 1/2 c of blueberries and smash with a fork.
  6. Add to the sauce pan with 1/2c water.
  7. Stir, bring to a boil and cook until translucent and thickened.
  8. Remove from heat and add the rest of berries.
  9. Allow to cool to room temperature.
  10. Prepare Cookie Batter
  11. In large bowl, cream together oil, butter, and sugar.
  12. Add eggs, lemon juice, lemon zest, & vanilla and mix well.
  13. Add flour, baking soda & salt mixture.
  14. Stir just until incorporate
  15. Spread 2/3 of batter on bottom of prepaired pan.
  16. Pour blueberry sauce over top, and then drop remaining batter in spoonfuls over fruit.
  17. Bake for 30-40 mins, until golden and springy to the touch.
  18. Let cool completly.
  19. Prepare icing.
  20. To make icing mix together icing sugar and lemon zest, mix well.
  21. Add lemon juice until you have a smooth, slightly runny icing.
  22. Drizzle over cookie bars and cut.
