Late Summer Sausage Pasta
- 1 package Penne Pasta (400 Gram Package)
- 1 Tablespoon Olive Oil
- 3 cloves Garlic, Minced
- 1/2 whole Red Onion, Chopped
- 1/2 whole Red Pepper Chopped
- 1/2 whole Yellow Pepper, Chopped
- 1/2 whole Green Pepper, Chopped
- 1 can (28 Oz. Can) Diced Tomatoes
- 1/4 cups Fresh Basil, Chopped
- 1 sprig Fresh Thyme, Remove The Leaves And Chop
- 2 sprigs Oregano, Remove The Leaves And Chop
- Red Pepper Flakes, to taste
- Salt And Pepper, to taste
- 1 Tablespoon Tomato Paste
- 3 whole Medium Tomatoes, Chopped
- 3 whole Spicy Sausage Links, Grilled Or Sauteed And Sliced
- 1/2 cups Mozzarella, Grated
- Parsley, For Garnish
- Cook the penne pasta in a large pot of boiling salted water according to package instructions for al dente.
- When done drain it and set aside.
- In a large saute pan over medium heat add the olive oil.
- Once oil is hot add the garlic, onion and peppers and saute until tender.
- Remove the vegetables from the pan and set aside.
- Place the canned tomatoes in the saute pan with the fresh herbs, red pepper flakes, salt and pepper and cook to reduce for 10 minutes on medium high heat.
- Add the tomato paste and stir to combine and let simmer for 5 minutes more.
- Add the fresh tomatoes, the sauteed peppers and the cooked and sliced sausage into the tomato sauce.
- Toss to combine and heat through.
- Add the penne pasta and the mozzarella.
- Toss to combine.
- Serve immediately sprinkled with the parsley.
