Mama Rita's Garlic Bread
- 3 garlic cloves, minced
- 14 teaspoon kosher salt
- 14 cup butter, softened
- 1 tablespoon mayonnaise
- 1 teaspoon finely chopped fresh basil
- 2 tablespoons grated parmesan cheese
- 14 teaspoon fresh ground black pepper
- 6 hoagie rolls, split lengthwise
- 14 cup grated parmesan cheese, for topping
- Preheat oven to 450F Line a baking sheet with aluminum foil.
- After mincing the garlic, sprinkle with salt.
- Using the flat side of a chef's knife, smear the salt and garlic across the cutting board.
- Scrape back into a pile and repeat until a fairly smooth paste is formed.
- (You can do the same thing in a mortar and pestle.)
- Transfer to a bowl.
- Combine garlic paste with butter, mayonnaise, basil, 2 tbsp Parmesan cheese and black pepper.
- Divide spread evenly amongst the 12 half-rolls, and smear evenly over cut surfaces.
- Arrange on baking sheet and sprinkle with additional Parmesan cheese.
- Bake in preheated oven 3-5 minutes, until edges are brown, spread is melted, and bread is hot all the way through.
- (Adjust time as needed depending on the size and shape of your bread.)
- Watch carefully to ensure they don't burn.
