Mama Rita's Garlic Bread

  1. Preheat oven to 450F Line a baking sheet with aluminum foil.
  2. After mincing the garlic, sprinkle with salt.
  3. Using the flat side of a chef's knife, smear the salt and garlic across the cutting board.
  4. Scrape back into a pile and repeat until a fairly smooth paste is formed.
  5. (You can do the same thing in a mortar and pestle.)
  6. Transfer to a bowl.
  7. Combine garlic paste with butter, mayonnaise, basil, 2 tbsp Parmesan cheese and black pepper.
  8. Divide spread evenly amongst the 12 half-rolls, and smear evenly over cut surfaces.
  9. Arrange on baking sheet and sprinkle with additional Parmesan cheese.
  10. Bake in preheated oven 3-5 minutes, until edges are brown, spread is melted, and bread is hot all the way through.
  11. (Adjust time as needed depending on the size and shape of your bread.)
  12. Watch carefully to ensure they don't burn.
