Chicken Monterey
- 4 boneless chicken breasts
- 1 12 cups sour cream
- 1 (7 ounce) can green chilies
- 1 minced garlic clove
- 4 spring onions, chopped
- 2 cups monterey jack cheese
- 2 tablespoons sliced jalapenos
- salt and pepper
- Place chicken breasts in bottom of casserole dish and season with salt and pepper.
- Mix sour cream, chillies, garlic, onions,and 1 c cheese.
- Pour over chicken.
- Sprinkle jalapenos on top of chicken cover dish and bake at 350 for 30 minutes.
- Sprinkle remaining cheese on top and cook for another 15 minutes.
- Serve over rice.
