Baked Sweet Potato hash
- 4 sweet potatoes (medium sized)
- 1 (8 ounce) roll of reduced fat jimmy dean breakfast sausage
- 1 sweet vidalia onion
- 2 teaspoons brown sugar
- 1 teaspoon minced garlic (dried)
- 1 teaspoon basil
- 14 teaspoon allspice
- 12 teaspoon cumin
- 1 dash salt and pepper
- Preheat oven to 325.
- Spray a 13x9 inch brownie pan or casserole dish with cooking spray or line it with tin foil.
- Combine the garlic, basil, allspice, and cumin together in a small bowl.
- Set aside.
- Wash and scrub the Sweet Potatoes ( you can peel them if you'd like but it's not necessary).
- Slice the sweet potatoes into cubes and place into the prepared baking dish.
- Slice the onion ( leave as large slices).
- In a medium skillet, cook and brown the sausage over medium-low heat.
- Once the meat is thoroughly cooked through add the onions and the brown sugar (Do not drain the meat as it is used for the sauteing).
- Saute for five minutes just so that the flavors mix.
- Spoon/Scrape fry pan mixture into the baking dish of sweet potatoes- stir to combine.
- Pour the seasonings over the mixture and, again, stir to combine.
- Make sure the seasoning has covered the entire contents of the pan.
- Place tin foil over the baking pan and set in the oven.
- Bake for 30 minutes or until the sweet potatoes are soft.
