Mama's Mango Bread
- 2 cups flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 12 cups sugar
- 12 teaspoon salt
- 3 eggs, slightly beaten
- 1 teaspoon vanilla
- 1 cup salad oil
- 2 cups mangoes, diced (not too ripe or stringy)
- 12 cup walnuts, chopped
- 12 cup coconut, fresh or frozen
- 12 cup raisins
- Preheat oven to 350 degrees.
- In a mixing bowl combine first 5 ingredients.
- To them, add all remaining ingredients.
- Grease 2 large loaf pans and bake for 55-60 minutes or until a toothpick (or fork) poked into the center comes out clean.
