Brekky Beans (21 Day Wonder Diet: Day 18)
- 1 small brown onion, finely chopped
- 1 garlic clove, crushed
- 2 shortcut bacon, rashers chopped finely
- 400 g diced tomatoes
- 1 tablespoon tomato paste
- 1 tablespoon coarse grain mustard
- 400 g white beans, rinsed and drained
- 2 tablespoons flat leaf parsley, coarsely chopped
- 2 slices rye bread, toasted
- Cook onion, garlic, and bacon in heated medium saucepan until onion softens.
- Add undrained tomatoes, paste, and mustard;cook, stirring, until hot.
- Add beans.
- Cook, stirring, until hot.
- Stir in parsley.
- Serve bean mixture with toast.
