Chilied Red Bean Dip

  1. Heat oil in a skillet.
  2. Add garlic, onion, green chili and chili powder and cook gently 4 minutes.
  3. Drain kidney beans, reserving juice.
  4. Reserve 3 tablespoons beans; process remainder in a blender or food processor to a puree.
  5. Add to onion mixture and stir in 2 tablespoons of reserved bean liquid; mix well.
  6. Stir in reserved beans and cheese.
  7. Cook gently about 2 minutes, stirring until cheese melts.
  8. Add salt and mix well.
  9. If mixture becomes too thick, add a little more reserved bean liquid.
  10. Spoon into a serving dish and garnish with chilies and parsley sprig, if desired.
  11. Serve warm with tortilla chips.
