Peach Topping For No Bake Chocolate Cheesecake Recipe

• 1 teaspoon unflavored gelatin
• 1 tbsp. cool water
• 2 tbsp. boiling water
• 1 c. heavy or possibly whipping cream
• 2 tbsp. sugar
• 1 teaspoon vanilla
• 1/2 c. sweetened peaches, liquid removed and diced

1. Sprinkle gelatin onto cool water in small glass dish; allow to stand a few min to soften.
2. Add in boiling water and stir till gelatin is dissolved.
3. Whip cream and sugar till stiff; beat in gelatin mix and vanilla.
4. Mix in diced peaches.
