Amaretto Panna Cotta
- 1 pint double cream
- 2 vanilla pods, split and scraped
- 1-1/2 sheets leaf gelatin
- 3 shots amaretto
- 3 tsp. caster sugar
- Soak gelatin in water.
- Place cream, vanilla beans and ameretto in a pot; bring to boil.
- Remove from heat and whisk in gelatin.
- Pour into ramekins or small molds.
- Chill for 12 hours.
- To serve, place ramekin in shallow dish of hot water for 5 seconds, then turn upside-down onto a cold plate.
