Simple Sweet and Spicy Chicken

  1. Cut chicken breasts in 1/2 inch cubes.
  2. Place chicken in a large plastic bag.
  3. Add taco seasoning and toss to coat.
  4. In a skillet, brown chicken in oil.
  5. Combine salsa and peach preserves; stir into skillet.
  6. Bring to a boil.
  7. Reduce heat; cover and simmer for 2-3 minutes or until meat juices run clear.
  8. Serve over rice.
