Turkey Soup Continental
- 1/4 c. margarine
- 1 c. chopped turkey
- 2 Tbsp. chopped onion
- 2 c. diced raw potatoes
- 1 c. diced celery
- 2 c. turkey broth
- 2 1/2 c. cream style corn
- 1 tall can evaporated milk
- 1 tsp. salt
- 1/4 tsp. paprika
- 1/4 tsp. ginger
- 1/4 tsp. pepper
- 2 Tbsp. chopped parsley
- On top of stove, melt butter over low heat.
- Add turkey and onion, cook until onion is well blended and slightly thick.
- Add the potatoes, celery and broth.
- Simmer until vegetables are tender.
- Add corn, milk and seasonings.
- Heat thoroughly, stirring occasionally.
- Season to taste with additional salt and pepper. Serve hot.
- Garnish with parsley and serve with crackers, hard rolls, or toast.
- Serves 8.
- Use a large pan.
